How to make really good mulled wine – and why genuine winter drinks can do more
Why traditional mulled wine often disappoints
Everyone knows the feeling:
You are at a Christmas market, holding the first cup of mulled wine in your hand – and after the second sip, you realize that it's really just hot sugar.
Too sweet. Too strong. Too much of everything.
But mulled wine can be really good.
If you give it the attention it deserves:
good ingredients, balance, patience – and a bit of creativity.
Because the problem rarely lies in the drink itself,
but rather in how it is made.
Anyone who has experienced how finely tuned a hot drink can taste,
would never want to go back to the disposable cup from the Christmas market.
This is how to make mulled wine really well
Good mulled wine has nothing to do with chance.
It is created like any drink – from good ingredients, patience, and balance.
1. The Wine:
Preferably choose a dry or semi-dry red wine with character – such as a Primitivo, Rioja or something similarly robust. If the wine tastes good on its own, it will also carry the spices better.
2. The Temperature:
Mulled wine must never boil. From 75 °C, aromas and alcohol evaporate. Gently heat and let it steep – that makes the difference.
3. The Spices:
Cinnamon stick, star anise, clove – but please whole, not powdered. Add some fresh citrus peels or a piece of vanilla.
4. The Character:
A splash of orange liqueur or a drop of almond syrup brings a Mediterranean note. A sprig of rosemary combines warmth with freshness – suddenly winter tastes like Mallorca in December.
5. The Patience:
Let the wine steep for at least 30 minutes over low heat. The slower it is, the rounder the aromas will become.
Finally, sweeten to taste lightly – ideally with agave syrup, honey or a bit of xylitol, if you prefer it low carb. Sugar is allowed, but not mandatory.
Thus, hot sugar water becomes a drink that tastes of warmth, spice, and memory – not of a hangover.
Modern Alternatives to Mulled Wine
Mulled wine is the classic – but not the only way to bring winter into a glass.
In 2025/26, it will be more versatile: less sugar, more character, more creativity.
1. Hot Negroni
The bitter classic gets some heat:
2 cl gin, 2 cl Campari, 2 cl red vermouth – warm everything slightly together, do not boil.
Pour into a heat-resistant cup, garnish with fresh orange zest.
Result: bitter, elegant, grown-up.
2. Spiced Mule
4 cl gin or vodka, 1 cl lime juice, 100 ml ginger beer.
Plus a pinch of cinnamon and a touch of cardamom.
Warm briefly and serve hot.
Spicy, fresh – ideal for winter evenings.
3. Mediterranean Edition
4 cl gin, 2 cl orange liqueur, 1 cl almond syrup, a splash of lemon juice, topped with 100 ml hot white wine or tonic water.
Add a sprig of rosemary and let it steep briefly.
This creates a drink that combines warmth and Mediterranean freshness – sunny in aroma, elegant in finish.
4. Non-Alcoholic Version
150 ml hibiscus tea, 50 ml grape juice, fresh orange juice, a sprig of rosemary and a bit of agave syrup to round it off.
Or a chai-lemon version with cinnamon and vanilla.
Taste does not need alcohol – just depth and balance.
The difference: These drinks are not a stopgap but rather their own moments of enjoyment.
They show that warmth and flavor can work together – without the typical sugar overload feeling.
When Winter Drinks Are Particularly Worth It
Winter drinks are more than a seasonal trend – they are small breaks.
Moments in which one lets go of the day and tastes warmth instead of just feeling it.
They are perfect for evenings with friends, for team events, or simply for a quiet Sunday when everything outside is gray.
A good hot drink makes the difference: it grounds, calms, and connects.
You don't need a big stage for that.
Just good ingredients, a little patience, and a desire for flavor.
Whether by the fireplace in Frankfurt, on the balcony in Berlin, or on a terrace in Mallorca – the feeling is the same:
a short moment of peace, fragrance, and true enjoyment.
